What Happens When You Eat Cauliflower

Cauliflower can be a gentle, nutritious addition to meals for older adults, providing fiber and key vitamins like C, K, folate, and potassium that support digestion, immunity, bones, and heart health—without adding heaviness or excess calories. It can be especially helpful as a lighter substitute for starches. However, large portions or raw cauliflower may cause bloating for some, and those with thyroid issues, kidney stones, or on blood thinners should be mindful of portion size. When eaten cooked and in moderation, cauliflower fits best as part of a balanced diet that listens to the body’s cues.
